- 400 grams of spaghetti
- 4 large eggs
- 100 grams grated Parmesan cheese
- 200 grams of pancetta or bacon strips
- 2 cloves of garlic, crushed
- Salt and freshly ground black pepper
- Parsley, finely chopped (optional)
Preparation:
- Bring a large saucepan of salted water to a boil. Add the spaghetti and cook according to the instructions on the package until al dente. This means the pasta is cooked but still has some bite. Check frequently to avoid overcooking the pasta.
- While the pasta cooks, prepare the other ingredients. In a medium bowl, whisk the eggs and half the Parmesan cheese. Season with a pinch of salt and quite a bit of freshly ground black pepper. Set the mixture aside for a moment.
- Heat a large skillet or wok over medium-high heat. Add the pancetta or bacon strips and fry until golden brown and crispy. This will take about 5-7 minutes. Stir frequently to make sure the pancetta cooks evenly and does not stick to the pan.

- Remove the skillet from the heat. Let the pasta cool for about a minute so that the eggs don’t solidify immediately when you add them. Pour the egg mixture over the pasta and stir quickly to create a creamy sauce. The remaining cooking water can be used to thin the sauce, if necessary.
